Gluten Free Dairy Free SCD Almond Flour Donuts


Can it be? A gluten free, dairy free, soy free sweet treat that is safe for the Specific Carbohydrate Diet followers? And it tastes great, too?  Yes, I'm happy to share this recipe with you!  I have to make a disclaimer up front: we are no longer required to follow a SCDiet, so I added a homemade chocolate ganache topping to our batch.  I apologize for teasing the SCD crowd with this beautifully tempting topping, but fear not, your day will come!  In the mean time, try topping yours with some homemade applesauce, apple chutney, or whipped honey.

Ingredients:
  • 4 eggs
  • 1 Cup almond flour
  • 1/4 Cup coconut flour
  • 1/2 Cup applesauce
  • 2 Tablespoons honey
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • optional: 1 tsp vanilla
Plug in a BabyCakes mini donut maker and let it get to ready heat while you mix the above ingredients together in a bowl. Fill the mini donut maker molds to the level line by spooning the thick batter into each opening. Cook aprox 3 minutes, or until done.  Pop out with fork and let cool.

These turned out moist, flavorful, and they rose to the challenge, looking like a regular donut in size and height. This batch was taste tested by children who don't eat a gluten free diet and the results were rave reviews and requests for seconds.  While this is still a treat item, I feel like it would be comparable to many granola options to send with a child in a school setting.  As the ingredients are mainly nuts, coconut, applesauce, and eggs, it builds a very protein rich snack that will stick with a person due to the rich and filling ingredients. To cut back on sweetener, swap out the honey for lakanto, erythriol, or 1/4 tsp stevia.  While I haven't tried this batch with egg replacer, I have had good luck using Flaxseed in the ratio of 1 Tablespoon milled flaxseed + 3 Tablespoons hot water as the equivalent to 1 egg.  

The following is not SCD safe: Ganache topping
 To make a simple ganache topping, warm water on a double boiler over the stove and add 1/2 cup dairy free, gluten free chocolate chips to 1/2 tsp coconut oil.  When the chocolate begins to melt, remove from heat and stir constantly. Dip the tops of each donut into the chocolate.

Gluten Free Donuts with BabyCake Mini Donut Maker


We received a mini donut maker as a gift, so we had to come up with a quick gluten free donut!
Here is what we made, and it passed the test. Very good, and very easy! This only took me 10-15 minutes from start to finish.
Enjoy!

3/4 Cup gluten free bisquik mix
3/4 tsp baking powder
1/4 tsp salt
2 tbsp oil (walnut, avocado, melted coconut)
1/4 cup sugar (or lakanto)
1 egg
1 tsp vanilla
1/4 cup applesauce
1/4 cup almond milk

Mix ingredients - batter will be somewhat thick. Spoon into heated mini donut maker quickly. Makes 2 batches. Remove when light shows "ready", or when golden.

These are gluten free, dairy free and easy! Variations: Use 1/4 tsp bitter almond instead of vanilla. Add 1/4 cup canned pumpkin instead of applesauce. Add 1 tsp pumpkin pie spice instead of vanilla. Add 1/4 cup cocoa powder. Frost or eat plain.
