Red Cabbage gluten free dairy free side

I loved the Red Cabbage served warm from Biergarten restaurant inside Epcot's Germany pavilion. The flavor brought me back to my grandmother's kitchen and her homemade sweet pickles! I knew I would have to recreate that taste in my own home. Lucky for me, Disney obliged by including their recipe in the Cooking with Mickey and the Disney Chefs cookbook. The recipe is a simple one. I modified it to suit the size of cabbage I had on hand, and this is what I came up with.
  • 1 small organic red cabbage, cleaned and chopped
  • 3/4 cup distilled vinegar
  • 3/4 cup sugar
  • 3/4 tsp caraway seeds
  • dash of clove powder
  • 1/2 tsp salt
Add all ingredients to pan, bring to boil. Stir and reduce heat to low. Let simmer for 45 minutes. Chill and refrigerate. The cookbook version attests that this simple side will last for up to 6 weeks when kept refrigerated.  I just love a food that brings me back to a place and time, and this will be a joyful bite to mix with our roasted chicken or brats and home style mashed potatoes. There are several fun and simple recipes in this cookbook, and while it lacks photos, you will still be pleased with several of the vegetarian soups, the mango sorbet, this salad and more. I love modifying the recipes we have tried on vacation. Bringing those connections between place, time, and taste all together into my kitchen is a treat we enjoy year round.
