A SERIOUS Chocolate Cookie - gluten free dairy free soy free


Ok, this is for those of you who LOVE chocolate. Dark chocolate. If you are more of an overly sweetened milk chocolate kind of person, just move along. You've been warned.

Bean and I made up a delightfully rich chocolate cookie. The idea was to frost it with a peppermint frosting, or just add a few drops of peppermint stevia, but we never got that far....the chocolate goodness won us over. Bean claimed this cookie was a happy combination of a dark chocolate bar, brownie and cookie. I can see modified versions of this cookie making its way into our holiday cookie tins for 2011.

Ingredients:
  • 1 stick softened earth balance butter (or coconut oil)
  • 1 egg
  • 1/2 cup sugar (or lakanto)
  • 3/4 cup almond flour
  • 3/4 cup pancake mix (we used Kinnikinnick pancake and waffle mix)
  • 3/4 cup cocoa powder (or carob)
  • 1/2 tsp salt
  • 1 tsp milled flaxseed
Mix ingredients together and drop in rounded teaspoons on a stone cooking sheet. Press down until approximately 1/2 inch thick. Bake 12-15 minutes, or until top is firm and starting to crack. Remove from cookie sheets.

These would be delightful with a touch of mint, or a dab of frosting. Also, adding some dark chocolate chips would just put these over the top!
