Gluten Free Lemon Poppy Seed Muffins - any mix

Any gluten free muffin mix can easily be turned into a lemon poppy seed muffin mix. Here I used King Arthur's mix and added the following:

  • 3 Tablespoons fresh squeezed lemon juice
  • the zest of 1 lemon (careful not to zest the bitter white part under the yellow layer)
  • 3 Tablespoons poppy seeds
It's that easy! Just follow the normal instructions, adding the above ingredients, for a nice twist on a classic. If your lemon is small, consider zesting 2 lemons to get that great lemon flavor. Enjoy!
