Mango Parfait

When sending snacks to my daughter's school today, she asked for an alternative to the usual kid school snacks of cupcakes or cookies.  Her request was a perfect choice for a morning snack option to serve to children as they start their school day.  She choose fresh mango parfaits!

This is so simple, I cannot even claim a "recipe".  All you do is peel mangoes and puree them.  I used 9 mangoes and I added 1-2 tablespoons of honey to the puree.  The honey is optional.  Some mangoes are sweeter than others, and you may decide it is not required. 

We simply layered organic vanilla yogurt with mango puree and we're finished.  Now the school children will have some fresh fruit and protein to start their morning studies.  A nice addition to this parfait for the adults, and children who won't protest the texture, would be 1/2 Tablespoon milled flaxseed and 1 Tablespoon ground walnuts or almonds to top.

We have heard a lot on the news, recently, about the growing of America in terms of weight and illness.  Consider a fruit based dessert like this in place of cakes and cookies.  To lower the sugar content, use plain greek yogurt and sweeten with stevia and fruit.

To make this dairy free, use a dairy free yogurt such as Almond, Rice, or Coconut yogurt.
