Veggies for Breakfast


Remember how to incorporate greens in the morning? If you would like a refresh, check out the Multi Grain Gluten Free Bread, Wilted Greens, and Egg post.

There are other vegetables to enjoy in the morning beyond spinach and kale, however. Here is one of my favorite quick start breakfasts. It's fast, nutritious, delicious, and oh so easy! There is no excuse not to get your veggies and protein in the morning :)

  • 1-2 omega 3 rich egg - cook in pan over medium/low heat
  • 1/2 - 1 cup chopped raw veggies (broccoli, snap peas, carrots, cauliflower all work well here)
  • 1/4 cup salsa of choice
  • 1 tsp veganaise, plain yogurt or sour cream (you can use Beanaise or Cashew Yogurt if you are unable to eat the others due to allergies)
  • 1 small clove garlic, pressed
Just as soon as your egg begins to firm in the pan, use the other half of the pan to spread out the veggies. Add the salsa to the veggies. This will help add steam and allow those veggies to stir fry quickly. What you want to see is a flash of deeper green appearing. The vegetables will still remain crisp. While that is cooking, add your 1 tsp of Veganaise (or other per above) and 1 minced clove of garlic. Mix them together in the center of the plate. Top this with the salsa and veggie mixture and stir around. The cream will blend nicely with the salsa. Add egg and enjoy!

This only took me 3 minutes to cook, so I know it's fast! You can add more vegetables if you like. Leftover vegetables can be utilized for this method as well. Enjoy your veggies :)
